Making Pizza dough

Pizza dough is very similar to the basic bread recipe but you can make it different by adding olive oil.
Flour choice is important some people use "00" or "double zero" flour but I find this type of flour has a lower hydration level so I recommend plain white flour when you are baking in a wood fired oven as this is the only scenario where you can achieve real high heat and for those temperature the dough must be very moist.
Shaping the dough is an art and it can take few years to get it perfect!
In Naples no pizza is thrown in the air mainly because the traditional Napoletana pizza is is made with a very very wet dough!
