Henri Granier has written an excellent French book on sourdough bread for home bakers, looking at the techniques of bread making as well as the philosophy surrounding the whole process (necessary harmony between growing the wheat, milling it and baking the bread).

Breadnz (Henri and Megan) has translated Henri's book from French to English. The English version is now available as an electronic book (Pdf format).
